ACF certification provides an ideal career progression ladder within the foodservice industry. Sam Label is currently practicing to take his practical culinary exam for the American Culinary Federation (ACF) to achieve the level of Certified Sous Chef.
Sam has been an ACF member for 3-years, is a 4 star graduate of Western Culinary School in Portland, Oregon and has been employed at CVI for three years.
For this test, Sam will be preparing four items within a three hour time frame;all from scratch. The guidelines are stringent and set by the American Culinary Federation for any person taking this test.
Other aspects of this certification include a thorough knowledge of food safety and sanitation, culinary nutrition, and supervisory management skills.
Sam has been preparing for this event since late October and is being coached by David Goodwin, one of only 4 accredited Culinary Examiners in the State of Nevada.
Sam repeatedly is going over every food item, all needed equipment and timing himself to make sure the test will be accomplished in the allotted amount of time.
Sam's test will be on January 22, 2008 at Truckee Meadows Community College in Reno. TMCC has one of the best culinary programs in the area and is one of the designated testing sites in the surrounding 7 states which also includes the Carson Valley Inn and the Eldorado Casino in Reno.
